The 'EFI' and 'Recovery HD' are system partitions. You'd better not do any thing operation to these partitions. For your question, do you mean why there are two 'Macintosh HD' partitions? If so, you may check your partition structure with Disk Utility.
When you have either FileVault or core storage enabled you see those two Macintosh HD partitions at the top, and that is normal. But I don't know what is up with that third, greyed out Macintosh HD you have selected.
Run the two commands below in Terminal one after the other and tell us the output so we can take a look.

Looks normal. Top "Mac HD" is the physical drive. Second one is the "mounted" Core Storage volume, third is the on-disk version. I see that on my SSD that has FileVault enabled: the third "Mac HD" is the actual encrypted storage, while the second entry is the decrypted and mounted volume.
