Extracting pictures from iPod video

Did you check the "Include full resolution pictures" box? If not you can't 
Without this checkbox ticked iTunes only includes scaled versions for display on the iPod in a strange format. With it checked just mount the iPod in disk mode and navigate the year/month/date folders to the pictures.
