I wanted to go with a single user interface on my home theater so I can shuffle between pictures, music, recorded and Live TV. I also would have two set top boxes so I can record one channel and watch another.

Has anyone setup something like this with one of the Elgato products, I was planning on attaching to a Mac Mini with external drive to store recorded TV content.

At this time, I am open to either using HD settop boxes with component out or even SD composite. Most the shows that are watched are kids showings that are not in HD anyway.

Curious if anyone has something similar setup that works well?

I recently looked at the windows media center route, it worked relatively well but had some hickups.

Are you going to have to pay a monthly fee for those boxes? You could get a Homerun Prime that has 3 tuners plus a cable card slot built in so that should help keep costs down. I don't think it works with a Mac especially if you are trying to watch HBO and stuff like that.
 
I am running the eyetv hd from my dual tuner fios box to my mini with a 8tb drobo. The one box can record 2 stations or my mini can capture 1 with eyetv and the box can record another. It's usually never an issue with me and the wife.
