Factory restore and backup question

For the newest update I did the restore on my iPad.
I had several documents in various apps (i.e. iBooks, GoodReader, ComicBook Reader) that I assumed was stored in iTunes.
If I have a good backup from before the restore, is there a way to individually restore those documents without a full restore of everything?
