is there a specific Model # or Part # I should be looking for when looking at a Factory Unlocked 8GB 3GS from Canada?

Ya I found that too... however I'm curious if it's different from the locked 8GB 3GS's

Well... the Apple store only sells unlocked phones...
You would get a locked 3GS from a carrier.
