Yet another bug? Today I sent an invitation to a family member and she accepted it, her name now being listed. However the number I sent the invitation to is still listed (number ending in 999) and whenever I click on it, it displays this “Invalid invitation” message. How do I delete it from the list? This didn’t happen with the other family member I added a few weeks ago.

Family sharing has always had problems for me with the kids. Sometimes, I have to allow their purchases 6 times for it to work!
Anyway, I guess you've tried everyone signing out and in again? Well, you and the person that isn't working anyway. This isn't a reset.
A lot of family sharing issues are solved that way.
 
I am the family organizer and I fixed this on my iPhone 6s running IOS 13.3 as follows: Go to Settings. Touch the arrow to the left of your name. Select Family Sharing. Select your name from the Family Members list. You should see an option in red that allows you to cancel pending invitations, click on it and when you go back to the previous screen the invalid invite should be gone. Hope it works for you too!
