Ive installed a used gpu on my 27" mid2010 iMac, i put thermal pads and paste and my iMac is working just fine.
I’m installed an fan app and the temperature is around 65-70C. Is that a normal temperature? What would be an alarming temp that I must look out for? What temps does your 2010 iMac produce?
Also one bad thing is that the fans are operating very high, what might be wrong?

Hmm... plz carry on with your thought. Its been a long time since i used that iMac so i cant recall, but i think there was a thermal sensor there. U think the absence of that sensor might be causing the fans to operate?

Your first sentence says 2020 and your question says 2010. Which are you asking about?

My 2020, as reported by "sudo powermetrics", when reasonably idle:
CPU die temperature: 53.62 C
GPU die temperature: 49.00 C

Oh I’m terribly sorry, it’s a typo mistake, I’m referring to a 27” mid 2010 iMac! 🙁 Sorry!
