Only way I can delete mail in my trash is one by one anyway to delete them all in one shot?

Nope, you can go to Settings and tell the mail program to erase deleted messages once a day (among other times)

Edit to add that this option is available under each account under the advanced tab.
 
If I understand what you're saying, you could certainly also navigate to the trashcan, hit Apple-A (select all) and then hit delete.... that's not *so* bad, is it?

You are right that wouldn't be bad, if the iPhone had an :apple: key

when you are in mail message list view, instead of opening a message just slide your finger from left to right on the message you want to delete. way faster than opening the message and delete it!!

But deleted messages then goto the trash can. So you have to delete them a second time.
