I just learned (very little) of the NVMe ssd today. I'm simply looking for a fast 2TB SSD, including an enclosure for my 2013 Mac Pro.

Along a Samsung 970 EVO? I'm only using it for external storage for music production. Long story short, I have over 1TB of sample libraries and plugins and some of them are incredibly slow-loading from a 7200 drive. I'm just looking for an SSD to speed up loading times.
Would a standard 2.5 TB SSD (samsung 860 EVO) and a cheap enclosure do the trick, or is this NVMe tech blowing those SATA drives out of the water? I'm willing to spend the extra money, but only if it's going to give me a significant speed increase over SATA drives.
Any recommendations would be very helpful.
