I want to buy the new Mac mini.
Mainly for FCP X with HD video. I think i'm going to buy the 2.7 i7 with AMD graphics. Or is the Quad-Core Server a wiser decision?

Server given that it can process with 8-threads whereas the i7 dual core processes with 4. I moved from a 2.8Ghz i7 dual core MBP to a 2.3Ghz quad core MBP, and my FCP rendering times were reduced by nearly half.

This isn't such a straightforward call. The quad core will help rendering, but fcp x does that in the background anyway. The HD 3000 does not support open cl though, whereas the AMD does. I'm really not a fan of that hd3000 chip.

mini server as media server

i have the same dilema - i want to use the mini as a media server hooked up to my TV as well as host itunes and other stuff. not really using it for FCP or video work.

would the intel graphics card work for my requirements?
