When I click on an Illustrator or Photoshop file it opens in preview and not the application. This is seriously annoying. What can be done?
 
In the Finder, select the file, open the info window and change the default application used to open it.
 
Seems like a huge hassle to do this with every file. How do I make the original application the "open with" without having to go back through all of my thousands of files?

In that same Get Info window select the app the choose Change All... then all files with that extension will be opened with the app you select.
