Hi. I am going to get a new macbook pro 14 and I am debating about setting a FileVault. I am wondering if it would be possible to unlock Filevault (and the whole computer) with the touch id. If I would need to really type a password each time the computer boots, it defeats the purpose and convenience of having a touch id.

Not from a power-off cold boot, no. You can if you wake it from sleep. No way around it.
What I do is never reboot unless it is needed for an update. I just let it sleep or close the lid after usage, so when I wake it up I just use TouchID to login.
The security outweighs the inconvenience here. Just use sleep instead of shut down.
Yeah, no good reason to reboot unless updating or something goes wrong.
The requirement for password upon a cold boot is by design. Same for iOS/iPadOS. But as others have said, there’s no need to shutdown your laptop unless you’re restarting for a software update or the battery dies.
