What is the deal with this app? I see that they sold to a large app company recently, and after downloading the app on my new iPhone, I get a message saying that I have to agree to the new terms and privacy policy to be able to use the app anymore. Has anyone read through this? It is pretty scary. I just don’t know how/if they will use anything I record with their app from now on. Does this just apply to the new version? Also, I haven’t done this before, but is there a way to use the older version of an app from another device on a new device?

If you download an app from the App Store it always installs the most recent version compatible with your version of iOS / iPad OS.
Since several versions it is not possible anymore to extract an app (.ipa) from an iOS / iPadOS device.
If you had installed any older version of the app via Apple Configurator through your Mac, you could have saved this .ipa file and transferred it now onto your new device.
Here is an example of the only way I know to get an older version now:
- Assuming the most recent app version requires at least iOS 16
- take a device with iOS 15 and install the app via Apple Configurator; save the downloaded .ipa file
- on your new device uninstall the app and install the saved .ipa file with Apple Configurator
- disable Automatic App Updates on your new device to prevent an install of the new version
