This is going to depend entirely on your needs and budget.

I use a 2018 Intel Mac Mini and an M1 Pro MacBook Pro to edit lectures, other videos at work (mostly 1080p) as a well as some personal projects (mostly 4K video shot on my iPhone). I use Final Cut several times a week. For my purposes, both are absolutely fine, though I do prefer editing 4K stuff on the MacBook Pro.

If I was editing more often (multiple times a day), or working exclusively in 4K or other larger videos formats, or applying complex effects, or export times were critical, the M1 Pro would be the minimum, and I might consider something newer.

So I'd consider exactly what your needs are. Are you trying to learn the software and try a few hobby projects? Most modern Macs will be fine. If your needs are greater than that, and turning around videos quickly pays the bills, then by all means go big. But I suspect if that were the case you would already have a good idea of your needs!
