All of a sudden, whenever I hit Option-Command-spacebar to open finder, I get a "Search this Mac" window instead of a finder window showing Documents or another folder. How do I change this behavior and get rid of the default Search this Mac window? Thanks!

Open System Preferences > Keyboard > Shortcuts > Spotlight. Uncheck "Show Finder search window".

Thanks, but when I do this, Option-Command-Space doesn't bring up Finder at all. It used to bring up a folder window not the search window. How do I restore that behavior?

Option-Command-Space is the default combination to bring up the Finder search window. Maybe you did customised it with a third party app before.
