What happened to my “Finder” dropdown menu? Running Catalina 10.15.2.

When I “right” click on Finder, all the familiar options popup in a small window (applications, configurations, desktop, etc, etc.

If I left click on Finder, something called “recents” popup instead. Is this a change o macOS? I prefer the way Finder used to open.

OR, was it always like it is now and I just forgot...

I think this is what you need: Go to Finder Preferences > New Finder windows show: The default for that function is "Recents." Change it to what you prefer.
THANKS, that's exactly what I was looking for and it still offers the RIGHT click option as well.
