I have a M1 MBA with a standard setup - ie Macintosh HD and Macintosh HD - Data volumes

My Finder window is shown below

I'm sure that before 11.2.1 the bottom one in the sidebar was Macintosh HD - Data, which is what I'd expect (Macintosh HD being unmounted by the system).
Since 11.2.1 and in 11.2.2 it now shows as Macintosh HD but that can't be right as Macintosh HD is not mounted.
In terms of size on the disc the Finder entry of Macintosh HD is an equal size to both Macintosh HD and Macintosh HD - Data added together.
Why the title change?
Are others seeing the same thing in Big Sur?

The only time I see "- Data" is in Disk Utility. I just see the regular boot drive name in the Side Bar.

I also didn't realize I was still using the 11.0 Beta 20A5395g. Until I looked at it for this thread. I guess I'll update to 11.2.2. Although with all the complaints around each update and the beta working flawlessly. I may not update.

System Information/Storage tab will also show both the Macintosh HD, and the Macintosh HD - Data volumes.
But then, neither of those volumes are what the system actually is using in real time. That's the one starting with "com.apple.os.update" -- your system snapshot, which is what you actually see mounted with the name Macintosh HD.
the snapshot is a virtual drive, not a physical drive. Your system handles everything, but shows only the mounted snapshot.

I know that but it used to be called Macintosh HD - Data in the Finder, not Macintosh HD. Or at least that is my memory of it :)

Yes, but the installer added and named that (second) drive, not you.
It's still there, with that name (it shows in your Disk Utility, as you know...)
You could think of that as a "child" of the boot volume, because that is what it is.

And, now Apple has changed the system in BigSur, so that "- Data" drive is no longer a direct choice for you, the user.
The drive that you have access to is the more-simply named Macintosh HD.
As I said, even that drive is not a physical drive, but the name of the virtual volume that your system uses.
And, no longer the simple relationship between the files and the volume where they reside. It's no longer a transparent "copy to a folder" action - however, that is still what you do with the virtual volume. You don't get open access to that "data" volume, but whatever needs to get there, still does through the snapshot/virtual volume. The operating system just takes care of that part for you.

I think there is more involved than my simplistic explanation, and my thoughts could be technically inaccurate - but the main thing to remember is that the system takes care of all that for you.
I think that Apple doesn't want you to be confused by that Data volume, so doesn't show it to you now.
