I was wondering whether getting one's fingerprint on the golden part of the SIM chip would affect the contact at all with the phone. Whenever I change my SIM I'm always careful to not touch the gold contact, but someone told me that it doesn't really matter. Is this true?

Always a good idea not to get skin oil on a contact.
However, I'd not touch them for a different reason: to avoid giving it a static shock and harming the chip inside. Or at least ground yourself before grabbing it.

It probably doesn't matter too much if you get a finger print on the gold contacts. The SIM cards are actually pretty resilient.
If your phone does have problems communicating with the SIM card (eg. due to corrosion on the contacts), you can often get pretty good results by gently rubbing the SIM contacts with a high quality soft white pencil eraser.
