I generally run 'First Aid" once a week. Does it matter which of the FOUR choices I select to run it? I've been doing all four, starting at the top.

Shoot - I don't even reboot my Mac once a month, much less do this. Is there some reason you've found this to be beneficial?

Sometimes my iMac acts sluggish, especially on the internet. After first aid it seems back to normal. I haven't done any tests if this is true, just 'seems' that way. (Catalina, but I also did it frequently with El Capitan/Sierra previous Mac)

OP:
I suggest that you continue to do what you've been doing.
Run first aid on ALL your volumes...

The most efficient way to run first aid on your boot drive is to restart to your recovery system, and run Disk Utility from there.
If that is what you do, then the restart is likely giving you the result of a more responsive system, with or without running first aid.
But, if you really need First Aid once a week (and it reports actual repairs) then maybe your SSD is not as healthy as it used to be.
