First time upgrading/jailbreaking/unlocking my iPhone 3g help!

I have iPhone 3g on 2.1 firmware and modem 2.11.07 that has never been updated (came with 2.1 out of box). I want to upgrade to 3.01 and unlock it but all the jailbreaking guides say I must already have 3.0 installed before jailbreaking/unlocking. My question is how do I go about upgrading to 3.01 to be able to jailbreak/unlock when iTunes is only showing the 3.1 update available?? Very confused please assist...

Go to iClarified, get a tutorial for JB a 3G to 3.0x and read it and follow it.

And iTunes is only showing the 3.1 because you either forgot to option click or you haven't downloaded the 3.0 or 3.0.1 IPSW's
