I spent a considerable amount of time on the phone this morning with Apple support staff (both lower and Senior level), and rather than spell out every last thing that I tried here, I figured I'd give you a quick and dirty replay and the fix.
Basically, if your YouTube app doesn't connect to YouTube ("Cannot connect to YouTube") or you're seeing the Connect to iTunes graphic every time you boot your iPad, you may be suffering from the same issue I had. Apparently, tokens aren't being properly set on the iPad, and while syncing with iTunes is supposed to fix this, it appears there may be a problem with running OS X 10.5.8 on the computer you're syncing to.
So what's the fix? Connect your iPad to a machine running 10.6.3 (or maybe 10.6.2). That's it. Both problems went away.
Just wanted to share the quick "fix" with everyone in case it helps them out. Believe me, I tried everything, including multiple settings resets and firmware restorations before I found something that solved the problem.
