I've noticed that if I have an email signature, all emails sent using Apple's Mail app appear in Times New Roman size 12. Is there any way around this?
 
You've probably checked the box in Preferences > Signatures that says to always match the default message font.

I believe you can change by:

Click on mail, preferences, accounts, signatures. Make your change there.

I might be being really dim here - but where is that option in iOS?
 
Apologies. I thought you were asking about Apple Mail. You might have to delete the existing signature and enter a new one. I think that it will match the message font unless you specifically format it otherwise.
 
If you format a signature, and then paste that into the signature box, it will remove the formatting, or at least the font.

However, if you then shake your iPad or do a Cmd+Z on a keyboard, you can undo that removal... and the font comes back.
