How do I install an older version of an iOS app without uninstalling the current version? I've googled and every "answer" I've found is the no-brainer "uninstall current version, drag older version ipa in, install that one". I mean I have data saved on this version, I don't want to lose all saved data by uninstalling it then reinstalling the older version...?

It's not possible.

The best you could hope for is that the data for the app is saved in iCloud.
