Hi there
I’m currently getting rid of my Macpro 2009 and I’m running the latest opencore with Monterey (12.6.3). I would like to format or factory reset everything so it has a clean install. What is the process so I can keep the boot screen and opencore?

Go through Recovery and erase the drive; it shouldn't erase OCLP because that's installed on the EFI partition.

Depends on whether you erase the whole drive or the partition/volumes. I think, erasing the whole drive will clear the EFI partition.
If you want to leave it set up for OCLP (eg not bare OpenCore,) you will need to restore the OpenCore app in /Library/Application Support/Dortania.

I don't seem to see the /Library/Application Support/Dortania.

  1. mount your EFI partition of your main drive
  2. make a copy of your /Volumes/EFI/EFI folder
  3. unmount the EFI partition
  4. make a macOS install media
  5. mount the EFI partition of the macOS install media
  6. place the EFI folder from step 2 in /Volumes/EFI/
  7. reboot and hold option key and select the macOS install media
  8. select macOS install, erase the disk and install macOS
  9. complete the macOS welcome screen
  10. mount the EFI partition of your main drive and place the EFI folder from step 2 in /Volumes/EFI/
  11. remove the macOS install media
  12. reboot and hold option key and select OpenCore
  13. select macOS
Now you have a clean install and OpenCore.
