iPhone Formating - Selling - Restoring (jailbroken)

Hellow, guys!
I've tried to do some searches and it seems like nothing is really what I want so .. I'll be quick,

Here's what I'll do:

• I'm gonna sell my phone (iPhone 4S 64GB iOS 6.0.1 10A523)
• I'm gonna buy a new phone (iPhone 5S 64GB)

Here's what I need:

• Format my phone
• Restore my contacts and MOST IMPORTANT my notes into my new phone

Here's my question:

• How do I completely format my phone, updating it to iOS7 removing the jailbreak and restoring my contacts and notes into my new iPhone 5S ?

So.. That's it!

Anyways with your iCloud account it saves your contacts, notes even if you don't restore from your backup. All you do is log in and your notes and contacts will load back.

Anyways with your iCloud account it saves your contacts, notes even if you don't restore from your backup. All you do is log in and your notes and contacts will load back.

notes are only saved to icloud if you have an @icloud.com account

use itunes. using iOS settings will not work on a jailbroken device
