A fraudulent charge in a high dollar amount was attempted (and blocked - I have to verify) in my Apple Card. I have never used the physical card ever.

even though it’s blocked it means my number has somehow been compromised. How is this possible? What should I do as I presume this won’t be the last time it happens?

If you don't plan on using the physical card, freeze it. If you need it for a back up, request a new card to get a new number.

If you think your virtual card is compromised, request to have it changed through the app.

I don't have an Apple Card and my suggestions are solely based on what I have read on what you can do with both virtual and physical cards.
