It works normally, but an (intentionally) invalid 10 digit number is sent with it as the originating number, which is fine. The number seems to be incremental, always up by one.

If it were possible to make it always the same number for a specific email address, it would categorize the messages in a single conversation, resulting in a much more organized SMS list for those that receive a lot of email sent to their SMS address.

I really doubt there's a way to do this, but I thought I might bring it up.
 
I'm gonna contact AT&T and see what they say. Not getting my hopes up but who knows. I'll post what I find out in case it might be useful to anyone else.
