Everywhere, yet nowhere.
When I called to change my shipping address, since I will be out of town for a 2 week period in which the iPad delivery is scheduled, she said that the Apple Care is actually just applied to the iPad, it is not actually shipped.
 
I know that for computers, AppleCare is shipped because they still send out the paperwork documenting that AppleCare has been set up for the computer (listing the hardware along with its serial number).

They may very well do the same thing with iPads. Of course, doing so would require that the serial number of the iPad be available, and they're not yet for 3G units, so it's possible that those AppleCare orders would get codes to use online to activate the AppleCare after the iPads arrive at their new homes.

No codes, the AppleCare is already automatically applied to your iPad if you order it at same time. There's no need to register for anything. iPad has serial numbers, both 3G and WiFi. You can see it in your About screen on the iPad.

The only thing that's shipped is an agreement or the policy for the AppleCare. Nothing else.
