Is there a way to completely backup my phone, like you can do on the iPhone? I ask because I may need to exchange it and I would rather not spend 20 hours getting everything set just how I want it again. Thanks.

Well I haven't rooted in years but you might want to look into making a nandroid backup. It makes a flashable image of your ROM/system and should keep everything intact as you have it now.

Well as I'm exchanging it (albeit for another S3) I don't want to root the device. Any other way?

If you have a microSD. Just download SanDisk Memory Zone from the Play Store and back up everything to extSdCard.
