I'd go for a ton of Nintendo titles, but I think they're kinda partial to the DS platform. It's really a shame that the big N couldn't at least give us Donkey Kong or Super Mario Bros.
I wish Sega would add the mini-games from Monkey Ball. I loved the one on GameCube where you rolled down a ramp and then flew like a hang glider. That could easily be added to SMB on iPhone as an in-app purchase. I think there were other games like monkey bowling and monkey baseball that were awesome time-wasters.

Agreed.
Double agreed. Pop Cap are looking at "bringing it to other platforms" and Bejeweled 2 sold pretty well, so hopefully this is happening...

I'd love the classic sierra games on the iphone (although the older text entry games may be a little harder to do).
Didn't one of the guys who worked on the XBox Monkey Island revamp drop a massive hint about that coming to the App Store?
