Right-click to show the package content
Go to Contents, Resources and copy, paste and change the name from IconData_10.11.plist to IconData_10.12.plist. Open it and search and change all 10.11 to 10.12.
then, reboot into recovery, open terminal, disable sip (google this if you need to); make your changes, log out, log in. confirm your changes, then again boot into recovery, and re-enable SIP.
BTW, Do you know what the terminal command is in Sierra to repair permissions? (long story, font related and Onyx for 10.12 isn't out yet)?great! yeah, never liked those garish blue folders... *shudder*
