Can I run one GeForce 8800 and 3 ATI 2600's simultaneously on a Mac Pro3,1 (2008)?

Combined they run @ 260 watts, which is below the max threshold of 300 watts published by Apple. My only concern is about heat.

Any info is much appreciated

It shouldn't a huge issue. Remember that the 300 threshold is the maximum for the slots themselves (75W per slot, per PCIe specifications). 2600 XTs don't run all that hot to begin with, especially if they aren't doing much more than driving additional displays.
 
Apple officially mentioned a BTO-configuration of four ATI 2600 XT in the MacPro 3,1 (see this support document), so i figure your planned config should pose no (heat) problem to the excellent thermal management of the MacPro.
