I have about 7gb of music in my iTunes library. I have about 250gb of music in folders outside of iTunes.

I have an 8gb Touch. When I want to add music from the 250gb, I delete some from the iTunes library first and then add the new ones.

I want to do iTunes Match but I need to know what music I can upload. Does it have to be only from the iTunes library (7gb) or can I point to other folders and upload my entire 250gb?

I don't want to have to move the 250gb to iTunes because then I obviously can't sync it to my Touch.

Why don't you sync your iPod with an iTunes playlist where you can add/remove songs to get the size you want.
Would be way faster that you current way of doing it.

Match will work with songs that are in iTunes only.

I'm not really sure what you're asking for. You should put all your music in the iTunes library, it's easy enough to pick what you want on mobile devices. Having things outside of iTunes and constantly switching them around sounds like a major inconvenience.

Add all of your 250 GBs to iTunes and fix any metadata. Once subscribed to iTunes Match, your entire 250 GB library will now be available on your iPod. The cool thing about Match is that you can listen to whatever you want anytime you have a Wi-Fi connection. Going on a trip? Just download the songs/albums from Match to your iPod you want to play offline.

Also from what I've read, Match works dynamically. As you play songs, iOS is deletes the older, not played as much songs so you don't fill your device.
