Dear Gregg2,You have nothing showing for Date Format. It is not possible for me to unselect, leaving that "blank". What happens when you click that? Perhaps this is just a general format preference setting, and you have to go into Control Center, as suggested above, to affect the Menu Bar.
Based on the screenshot, are you referring to the date and time text above the Region line?System Settings > General > Language & Region

It is created by the program logic that formats the "example section" of the "Language & Region" window. Both lines are formatted based on the selected region. The formatting is not affected by any changes in the Control Center Clock settings.The attached shows what you're asking about:
the date and time text above the Region line.
