Just this last week I switched back to having a MacBook again (yayyy!!!), but I found I am having problems with one application so far: Tex Maker.

My biggest issue is I can't generate new PDFs, and my assumption is I am missing some of my packages that I make some of my docs with. With Linux, it's easy-peasy know the name of the package and use the package manager. Does homebrew let you get additional LaTeX packages? Or is there a more official way of installing these packages on macOS?

As far as I know, home-brew can not be used for such purpose.
I use tlmgr (and the gui interface called Tex Live Utility) for TeX package managing.
If what you have install from home-brew is MacTeX then both of them should be included.
