Getting off the Beta train is not easy..

I am on ios 9 beta train and I cannot get off beta. I can restore the phone, but that restore would not bring back all the latest texts/logs and other stuff that happened.

Is there a way to get off the beta and install ios 9.0.2 but still keep all the settings/messages/call logs without losing?

Nope, you cannot restore a backup from a newer iOS version. You'll have to set up as new. Or just wait until 9.1 is officially released then restore the beta backup.

yes. download the ispw file for 9.0.2 and using iTunes shift/update and browse to the file. Of course delete the profile if you are on public beta. Also you can delete the profile and just wait until the release and update and no longer get betas.

True, back in the iOS 5-8 beta days I would edit the .plst to change the version but I never got that to work with iOS 9 beta.

I wouldn't recommend back revving to an older version. Wait for 9.1 public release to drop and then update to it and remove the beta profile so you don't see any future betas. Also, if you see any beta for versions above 9.1 (i.e. 9.1.1), DO NOT APPLY.

Ah interesting. I haven't actually tried the plist edit with iOS 9. Good to know. But a lot of folks have used the shift/update to go back to even iOS8 (when it was still being signed) and others to 9.0.2. Not sure why anyone would want to as 9.1 b5 seems better than 9.0.2 but..............

1: Remove the beta profile off your phone
2: Download the 9.0.2 .ipsw file.
3: Connect your phone to your computer.
4: Open iTunes and hold down the Option key and click Update
5: Select the 9.0.2 .ipsw file you downloaded
6: Wait for it to do its thing.

That's it. No restore or loss of data. Nothing changes except the version of iOS. It reverts back down just the same as if you went up on an update. Apple has made it easier with iOS 9 to do this. (In the past you had to restore I believe.)

if you didn't know about all these, you shouldnt have installed a beta OS on your device.

With that method you don't need to put a backup onto the phone or lose anything, you are just changing the iOS on it while keeping all the data and settings the same.

Don't restore, just plug in your phone on 9.1 with your complete backup, then hold shift or option while clicking update in iTunes and then select the 9.0.2 file.

OK sounds like you already restored back so 9.0.2 before doing the recommended "update" as mentioned here. If thats the case, you will need to apply the 9.1 beta, then restore your backup that you have that contains the info you want. THEN do the shift/update or option/update (if mac). Also you can try the following (it used to work but some have said iOS9 has stopped this) open your iTunes backup folder, look for the info.plist file. Edit that file (i would make a copy first just to be safe) and look for the Product Version section. Change that from 9.1 to 9.0.2. save it and see if you can then restore your backup.

Not to my knowledge.

Though if most of your data are already in the cloud, you could do a fresh restore, and sync most of your settings. You will lose your SMSes and any other files that can't be backed up this way though.

iOS 9.1 should be out soon, so I suggest you be patient for just that bit longer. Once it is released, backup your phone, do a clean restore to 9.1, then restore your settings.
