My AppleTV "just works". I have had zero issues in the year its been up and running.

Maybe you have network issues
 
That was my thought...

so I've spent the past few months chasing down that end. Have tried everything from locking channels to swapping out my AEBS, to reinstalling iTunes and even reinstalling OSX on the host computer. No luck. There seem to be a lot of folks having this problem, but no 'cure' has been found...

Its a shame, really, because when it works, its awesome- but there's nothing more frustrating that settling in to watch a movie, only to have to get up and spend 15 minutes rebooting everything, which itself doesn't always fix the problem...

I agree with that last part... I'm not sure what I've done but I haven't noticed it happening in the last little while. Certainly is frustrating though.

What I've done is thought ahead (in most situations) and sync'd a coupe of tv shows and movies (more so tv shows) that I might be watching so that just in case iTunes isn't up and running they'll be on the Apple TV. I usually stream everything so getting in the habit of having some stuff syc'd has been tough but when it wouldn't connect it certainly was useful!
 
Hmmm...I've had to restart iTunes many times in the past to have it recognize the AppleTV. I've had more issues with AppleTV dropping network shares until I switched to a Cat5e cable instead of wireless and used FreeNAS to serve up my files instead of WinXP. I used to have to reboot everything constantly. Since I've made these changes, I have no connection problems since.
 
You should only need to restart iTunes when this happens.

Occurances have reduced since I switched to Ethernet.

I also create a smart playlist of the last weeks tv shows, and the last 5 movies and sync those - just in case.

I used to have this problem once in a while. I found that by reconnecting the AppleTV to the network, it would appear in iTunes again (whereas restarting iTunes or my computer never worked).

A couple of updates back, the problem quit occurring and it's been solid for many months now.
 
I had the same problem, apple tv losing itunes, unable to find each other it was a nightmare. I went to the apple store who checked that my mac and apple tv could see each other on their network, then spent 45 minutes with the support tech from the router company, he eventually came to the conclusion that it was his company's router that was causing the problem, I changed to another brand and have never had a drop out since.
 
I started having issues when I updated the firmware on my Time Capsule. When I applied 7.4.1 update to my previous gen TC (the one without the dual-band hardware), my AppleTV would disappear from iTunes several times a day. After weeks of searching, I came across a suggestion on Apple's discussion forums to revert to firmware 7.3.2 and I haven't had a problem since.

What's your setup?

You may want to connect a notebook to your AEBS from exactly where your AppleTV is and do a continuous ping in Terminal for 10 mins to the AEBS's IP and see if you're losing any packets. While Pinging if you have a cordless phone, try using it, call your mobile, use your microwave, etc to see if you're getting interference/dropped packets. Run this test during times when you're having issues.

Also, are your iTunes content on another hard disk? Are your hard drives set to sleep (System Preferences -> Energy Saver)? Disable it if you're streaming content to the AppleTV.
