Hey Guys.
I have a problem and I hope you can help me with it.
So yesterday I set up Gmail on my iPhone. I used the new method (I set it up as an MS Exchange account) and everything is working just fine.
There is however, one problem:
The Folder structure is weird. It lists some of my folders as subfolders of [Gmail] (Screenshot attached). Also I don't want the All Mail Folder on my iPhone as I never liked it.
Is there anything I can do to get rid of the All Mail Folder on my iPhone and the [Gmail] folder and just make the subfolders (Spam and Starred) regular folders?
If that is not possible, can I just get rid of the All Mail, Spam and Starred Folders all together?

The folders you are seeing are labels in gmail from the web. Labels are defined as separate mail from your Inbox, unless of course they retain the Inbox label.

The way the iPhone displays them is like folders because the iPhone has no other way of showing mail messages with labels. If you don't like this method of them being display I would recommend just using the mobile version of the web interface. It's quite good and I think it doesnt display mail like the mail app.
