is there a way to make the iOS version of google maps change to night mode when In a tunnel in the same way the android version does?

There's no setting for it manually. I believe it relies on the ambient light sensor. The amount of light in the tunnel may not reach the iOS apps threshold.

It works both ways. It will sense it automatically or you can manually override it.
