I just got a new iMac and I was wondering if I HAVE to restore to factory settings and re-sync all my music. Is there any way that I could sync all my iPods without having to start from scratch?

You'll have to re-sync all your music, but you can move your playlists from your previous computer.
A restore will be needed if your previous computer was a PC.

If you move your entire iTunes folder from /Music/ from your old mac to your new mac, it will use your previous itunes library and you will not have to restore.

Exactly. Once the entire iTunes library folder is transferred to the new Mac, you shouldn't have any problems with the iPod itself and should not have to restore the iPod.
Cheers

drop your library onto a disk drive. You should then be able to get the data moved from there.

Thanks guys I'm doing that right now. Can't believe how fast my new 24" iMac is compared to my eMac lol.
