I have a flashed 4,1 cMP that came w/an XFX Radeon 7950 (that I flashed for boot screen).
I want to get the 34" Dell for general use and image editing-- I'm not a PC/Mac gamer at all. I just want the screen realestate and hate dual monitor setups.

I read conflicting specs on this gpu series and wondering if it will drive the panel's 3440x1440 native resolution?

Yes, using either the mDP/DP (Max 4094x2160 @ 60 Hz) or HDMI (Max 4096x2160 @ 30 Hz) output on the HD7950 will get you the max resolution, according to the AMD specs here.

Make sure to display DP 1.2 if possible, otherwise your Mac will most likely refuse to boot with the screen attached. DP 1.1 is hopefully sufficient to drive it at full resolution with 60 Hz.
