Good day to you all.
I have. MacPro 5,1 running High Sierra. I’m looking to install Mojave and understand you have to have a GPU which supports ‘metal’.
I have acquired a Saphire Pulse Radeon RX580, will this just install? Plug and play? or will I need to search for drivers?
any advice would be appreciated

You made a great choice (maybe because I have one in my MacPro 5,1). It is plug and play. If you go with using the OpenCore boot loader you can take your machine up to the most current version of Mojave, Catalina and Big Sur.
Some people are testing the beta versions of Monterey on MacPro 5,1 using OpenCore. If you want to learn about OpenCore go to this MacRumors thread OpenCore on the Mac Pro

Hi, dataid, thank you for answering. I take it you can install Mojave once I’ve installed the RX580, but you have to in OpenCore to go any further?

Have you got the dual mini 6-pin to 8 pin power connector? You'll need that.

I've got Mojave installed with the same graphics card on a genuine Mac Pro 5,1 but didn't install OpenCore. The only thing is you don't get the bootloader appearing at start, so no grey screen and progress bar or the option to boot from different disks.

OpenCore looked a bit tricky to sort out immediately.

Dataid: How are you using the Samsung 870 SSD? I have an 870 EVO 2.5" SSD and was told it wouldn't work at all.

Yes, once you have installed the RX580 you will be able to install Mojave natively. To go to Catalina and beyond you will need to use the OpenCore boot loader. It takes some time to understand and master the approach on the OpenCore thread. An easier method is to use Open Core Legacy Patcher, OCLP. This provides a menu based interface to configuring and installing the basic OpenCore software. Here is the URL OpenCore Legacy Patcher.

Thank you all again. So the 8 pin to dual 6 pin is the 8 pin male and the dual 6 a female?

Do you connect both 6 pin connections to the two pci aux power connections?
