I'm curious, too. Searched a handful of times but never had any luck.
I've ripped some live video performances from DVDs I own, but can't get just the audio. I listen to these videos sometimes but never watch them, and would love mp3/aac versions since they'd consume a lot less space thus leaving room for more actual performances.

Well if you rip your dvd's to a video file that plays in Quicktime (many threads about this), you could then export (parts of) the movie into just an audio format. Granted, definite loss of quality (though you could adjust the settings to get the best result), but it works. Depends on how much of an audiophile you are.
MacTheRipper works to pull audio streams by chapter or title. There's a tutorial here: http://www.iskysoft.com/article/how-to-use-mactheripper-to-extract-audio-from-dvd.html
0sex (Zero instead of an O.) also works. It's old, old software but runs perfectly with Rosetta. It's the same concept of ripping the elementary streams rather than one combined stream of video and audio. I've used 0sex since Panther to rip audio streams from DVD.
After you've ripped the AC3 file, you need to convert it. I use ffmpegX.
Unfortunately Handbrake can't yet do this. All of the software I mentioned is easily found through Google. (MTR's developer will make you jump through hoops to get the latest release but Google is your friend.)

Don't waste time ripping the whole video and then ripping the audio from the video. There are much faster ways of doing it.

Use Handbrake to rip the DVD, then open in Quicktime and extract the audio. You'll have to trim to each song to save as individual tracks.
Thanks for the suggestions. I forgot to mention that I'm running Windows and don't have QuickTime Pro. Will these options work?

MacTheRipper and 0sex are both Mac-only applications. Sorry, I haven't used a PC in years so I don't know how to do this with Windows software. I'd imagine there's something out there to achieve it. Googling something along the lines of "ripping DVD audio" should find you something.
