I liked what I read about the GTX 570 for around $120 to $150 and the GTX 670 for around $300 to $350.
For what you're doing those seem the best fit to me. As a 3D application developer and designer myself, I would recommend avoiding ATI cards!

If you work with After Effects and the Adobe Suite than I would highly suggest the GTX 680. I have this card and it runs great in my Mac Pro. Cin 4D is snappy and After Effects runs very smooth. Just remember that you have to enable the CUDA cores on the card once you get it, this way you can switch to GPU rendering in After Effects and Premier. Also the card performs great in Final Cut X just incase you're wondering. I too was in the same scenario as you with deciding on what card to purchase, and I can say I'm very happy with EVGA GTX 680 purchase.

I, too, need GPU card advice...: i have a quad 3.0 Ghz MP 1,1. my main apps are After Effects, Maya, Nuke, FCP, AVID, all CS6 suite apps., general 3d creation work. what are my best choices to flash a PC card model just under the nvidia GTX 680 ( $$ i mean. the 680 is btw $200-300 currently used. my current range for this is btw $100-200 used). i currently have the radeon x1900 xt 512MB. i really need to get a 1GB card at least.

If $100 that pretty much limits you to finding an exceptional deal on a 1.2GB GTX570. $150 to $180 after shipping, seems to be the average "good deal" in the USA.
Likewise you might be able to pick up a GTX670 for $200 id you're patient and check the auctions daily. I didn't research the 670 crads heavily enough to know but I think they start at 2GB.
I don't think you will find a GTX680 for $200 anytime this year. Also I've forgotten already but I think the GTX680 and 670 needs the 64BIT kernel in order to run OS X 10.8.x which is required for those cards. So you would need to implement that hack as well if going the the 6xx cards.
I would never recommend an ATI card to anyone so I dunno prices on them.

I want like to jump in with my similar question. I know read all the threads about it ( more or less) , but i´m still confused ... so let me ask concret please.
I´ve a MacPro 2010, OS 10.8.3, grahic card is a 3 year old Quadro 4000 for Mac. I use the Mac mostly for simulation /rendering ni Cinema4D/Realflow and After Effects.
I would like to buy a GTX 680. I´m a bit confused about a Mac specific version or to use an standard PC card an baout memory, 2 GB or 4GB VRAM.
Can i use a normal PC card with 4 GB VRAM ? Or do i have to buy a special Mac an more expensive Mac version ? I´m not familiar with flashing etc., i´m a normal user and i would like to install the new card, if even possible.
What card could you recommend , besides the EVGA GTX 680 ?
