Is the make of a graphics card important! Is there much difference between an Asus Radeon RX580 and a sapphire?

You’ll see debates about certain brands being of better quality and having certain features, but every brand has quality issues at some point and feature importance varies by user. For the most part, if anything, you should choose s brand based on customer service ratings/reviews. So, if you do happen to encounter a problem, you can (hopefully) feel confident it will be addressed.

Unless you find specific incompatibilities (Mac Pros can be picky) then no, there isn't any significant difference in make. NVIDIA/AMD don't just let anyone make their cards, so generally they're all good quality. Occassionally you'll find "overclocked" "superclocked" "rgb" "water cooled" etc variations that offer slight differences, but the fastest AMD RX 570 for example, won't perform any better than the slowest AMD RX 580.
