A little background on my "family" plan, at the moment I'm under my step mom's family plan because she gets a great discount for working with ATT.

Well when I was going through the process of activating the phone, I was prepared to take "finacial responsibility" over the plan and was expecting to pay over $80/month. Well after an interesting pop-up something about IRU and discount plans etc( a bunch of acronyms I' didn't hunderstand:p) It said something about they could only offer me the data plan + an additional 1500sm for $10/month.

All in all, I'm glad I end up only having to pay $30 a month and keep the thousands of minutes and rollovers that went along with the current minute plan. (Assuming I get to use the rollover minutes still)
 
We had a family plan also. Just had to add $20 for each iPhone and kept the old plan which was 850min/mo. I don't know about roll-over minutes (haven't checked yet). I do know if you change plans, you lose them.

Activation for the first iPhone took about 20 minutes, which I attribute to it being 9pm on launch night. My wife's took <5 minutes the following night. No problems at all - both went very smooth.

I just did mine today and yea it was about 5 minutes. I was glad I didn't have to branch off the plan and pay the an extra 50+ on top of it. :D
