Hello,
I have an iPhone 3GS on iOS 5.
iMessage works well but the group chat option seems to be unavailable.
I've also had a look at a friend's iPhone 4 and the option is unavailable on that one too.

What gives?

This isn't actually my screenshot but it shows what's missing.

Try this thread
http://att.macrumors.com/showthread.php?t=1265480

or page 67 of the manual:

Sending messages to a group
Group messaging lets you send a message to multiple recipients. Group messaging works with iMessage and MMS (not available in all areas).
Send messages to a group: Tap , then enter multiple recipients.
Note: With MMS, group messaging must also be turned on in Settings > Messages, and replies are sent only to you—they aren’t copied to the other people in the group.

I don't have the option to turn it on.

Turn message off then on again

try to create a group message by typing in everyones name in the message app

Also all the people in the group have to have imessage enabled

Hello,
Thank you for your response.
I turned iMessage on and off but the option still didn't appear.

I sent a group message to 3 iOS5 contacts (blue bubble) and while none of them has responded yet, the option still hasn't appeared.

now I'm stumped, the last resort is to restore as new

Mine doesn't have that option either, but it definitely works. If you send a message to multiple recipients, what used to happen (pre-iOS 5 and iMessage) is that you'd have a grouped thread with the message you sent once and all the recipients at the top, but their replies would appear as normal in each individual conversation history. When you do it now, the replies thread through into the single chat. Just wait for one of them to reply, and see whether it appears under the message thread you just created or under all the previous messages they've sent you.

I expect the replies will be part of a single thread.
iMessage seems to work so I expect group chat will work as well.

Are you also on a UK network by any chance?

Actually, I've had one reply and while it's iMessage (blue bubble), it didn't come in on the group thread.

Actually, the first recipient chose to reply to an individual message rather than the thread. Other people have replied to the group.
Group chat works.
