Hello.

I've found a cheap Mac Pro. I costs 370$. I'm thinking that it might be a 1,1 because it's so cheap, but it doesn't really matter wether it's a 1,1 or something else. But will it be able to handle a new GFX card like the GTX 680 or just another card from the 600 series.

It should. Just make sure you get the right power cables for it to match up to the logic board. You wont have a boot screen but it should boot into the OS. I use a 570 GTX with no issues.
 
What about the 580 will that one work? Will the GTX 680 work if I install the drivers manually?

580 will work too I believe, nearly all Kepler cards supported since 10.8.3. The nice thing about the 680 is you can flash it with a Mac EFI bios giving you a boot screen. All the roms and instructions are in this forum too.
 
The EFI boot screen for GTX 680s are meant for 64 bit EFI Mac Pros. The 1,1 and 2,1 are 32 bit and I don't think it will work. That's why there are 32 bit and 64 bit versions of the 8800 GT cards.
