I understand that because of power the new GTX 770 and GTX 780 but will the GTX 760 run in the Mac Pro 5,1.

I don't think the drivers exist for os x but it might work in windows

According to this post, the GTX 770 seems fine for the MP 5,1 even with the TDP of 230W, but you need to use either the NVIDIA 10.8.3 web driver or OS X 10.8.4 for the GTX 7xx series.
