Was thinking of getting either the following 670 or 680 to use in my 4.1 flashed to 5.1. I know that the power is safe with the 670 since it's 2x6 pin but has anyone had any problems with the 680 when using a 8pin to 6pin adapter and not adding additional power?

There's a Mac version. You might be able to compare specs in case it's clocked lower or something of that sort. I don't know of any differences aside from the EFI enabling boot screens. The difference seems to be $100 for the mac version.
 
get an EVGA PC GTX 680 and flash the MAC Firmware onto it. IT uses 6pin + 6pin for power, so no power issues.

There aren't any differences apart from boot screens. However, that would be worth $100 to me as I use select-boot all the time ( currently I use an external PSU so I can run a 5870 with my GTX670 ).

Make sure if you buy something other than a "Mac edition" that it doesn't have an 8 pin plug (unless you REALLY want that card)--you'll have to use an external PSU. Most GTX670's are NOT stock and actually have an 8 pin plug. It is likely okay to use a 6->8 pin adapter for the GTX 670 as long as you don't manually overclock (non-stock's are OC'd a bit by default but not enough to make a significant difference in power requirement).

The MSI GTX680 has two 6 pins connectors and works pretty well, including boot screen when flashed.
